Preparation steps

Scrub the potatoes and cook in boiling salted water until fork-tender, about 20 minutes. Drain, peel, and halve.

Rinse and trim the beans, then cut diagonally into 3 cm (approximately 1-inch) long pieces and cook in boiling salted water about 10 minutes. Remove from heat and drain.

Peel and slice shallot into thin rings. Rinse, wipe dry and quarter the apples. Remove seeds and core and cut into thin wedges. Sprinkle with a little lemon juice.

Rinse fillets under cold water, pat dry and cut into 3 cm (approximately 1-inch) long pieces.

Whisk together the vinegar, vegetable stock, salt, pepper, sugar, mustard, and oil. Season to taste. Combine all ingredients in a large serving bowl, toss gently with the sauce. Arrange the salad on plates and garnish with dill. Serve immediately.
