1 shallot
1 small, tart Apple
1 tablespoon lemon juice
400 grams cooked Beets (vacuum-packed)
250 grams Sour cream
250 grams mild Pickled herring
freshly ground peppers
sugar
2 tablespoons scallions

Preparation steps

1.

Peel shallot and chop finely. Rinse and dry apple, halve and core, cut into small cubes and combine with lemon juice. Cut beets into small cubes.  

2.

Puree about 1/4 of beets with sour cream. Add shallot, remaining beets and apple. Rinse and pat dry herring, cut into bite-sized pieces.

3.

Combine herring with the rest of ingredients, season with salt, sugar and pepper. Refrigerate for at least 1 hour. Season to taste again and place into glass jars. Sprinkle with chives and serve with fresh bread.
