For the crackers
3 eggs
½ tsp salt
100 grams Pastry flour
1 pinch Baking powder
For the herring
75 grams Apple
150 grams Gouda (medium-aged)
50 grams Pickled cucumber
200 grams Pickled herring
120 grams Mayonnaise
3 Tbsps Sour cream
1 Tbsp lemon juice
60 grams String bean (cooked)
2 shallots (finely diced)
1 tsp Mustard (medium hot)
Lettuce (for garnish)
½ bunch Arugula (for garnish)
12 slices Italian Salami
vegetable oil (for frying)

Preparation steps


For the crackers, line a baking sheet with parchment paper. Preheat the oven to 175°C (approximately 350°F). Separate the eggs. Whip the egg whites until stiff. Beat yolks with the salt and 1 tablespoon warm water until frothy. Sift int the flour and stir. Fold in egg whites. Spread the batter on the prepared baking sheet and bake in a preheated oven for about 10 minutes. Remove from oven, unmold on a cooking rack, remove the baking paper and cut while still warm into 4 strips. Wrap each strip around a metal baking ring and secure with aluminum foil twisted at the ends. Let the crackers cool.


For the salad, heat the oil and fry the slices of salami. Remove and drain on paper towels. Rinse the lettuce and arugula, spin dry and set aside. Peel, core and dice the apples. Cut cheese into cubes and cut the herring into bite-sized pieces. Finely dice the pickles. Mix mayonnaise with sour cream and mustard, add lemon juice, mix well and season with salt and pepper. Add shallots, beans, cheese, herring and apples. Cover the herring salad and chill. To serve, fill the cracker rings with the herring salad and top each with 3 slices of fried salami. Garnish with lettuce leaves and arugula and serve immediately.
