6 fresh Herring (kitchen ready)
1 shallot (cut into thin rings)
1 carrot (thinly sliced)
2 stalks Celery (thinly sliced)
1 Tbsp parsley (finely chopped)
1 tsp peppercorns
1 bay leaf
salt

3 Tbsps lemon juice
1 lemon (cut into wedges)
250 milliliters dry white wine
250 milliliters water
1 Tbsp butter
parsley (for garnish)

Preparation steps

1.

Season herring with salt, pepper and 1 tablespoon lemon juice.

Sauté vegetables and bay leaf in melted butter, deglaze with wine and water and add 2 tablespoons of lemon juice and the peppercorns. Cover and simmer about 20 minutes. Season with salt and stir in parsley.

3.

Add herring and simmer until done, about 6 minutes.

4.

Remove herring from pan and arrange on a platter with the vegetables and some broth. Garnish with parsley leaves.

5.

Serve with lemon wedges.
