- 8 Herring
- 4 carrots
- 2 onions
- 1 garlic clove
- 1 organic lemon
- ½ l apple cider vinegar
Preparation steps

Have the fishmonger remove the innards of the fish, rinse thoroughly and pat dry.
Peel and rinse the carrots and cut into diagonal slices. Peel the onions and cut into thin rings. Line a baking dish with carrots and onion and place the herring on top. Cut the lemon into thin slices and place them in between the fish.

Preheat the oven to 150ºC (approximately 300ºF).
Boil the vinegar and pour over the herring. Bake in the oven for about 30 minutes, basting repeatedly with the juices.
Allow to cool and serve drizzled with the juices.
