400 grams Herring (with skin, boneless)
salt
freshly ground peppers
1 tsp chopped Dill
1 tsp chopped parsley
1 tsp scallions
2 Tbsps Mustard
125 grams Whipped cream
100 grams Feta
2 Tbsps grated Parmesan
100 grams black Olives (pitted)
125 grams Cherry tomatoes
fresh thyme (for garnishing)

Preparation steps

Slice olives. Rinse, pat dry and halve tomatoes. Rinse herring fillets under running cold water rinse and pat dry. Cut fillets diagonally into 3 cm (approximately 1 inch) strips and lay next to each other in a greased baking pan. Season with salt and pepper.

Combine herbs, mustard and cream and spread over herring fillets. Bake in preheated oven at 200°C (approximately 400°F) for about 15 minutes. Remove from the oven and arrange tomatoes and olives on top, sprinkle with crumbled feta and Parmesan and bake for another 10 minutes. Remove from the oven and sprinkle with thyme. Serve immediately.
