Herring and Apple Salad with Yogurt Vinaigrette
- 6 pickled Herring
- 2 Pickled cucumbers (thinly sliced)
- 2 shallots
- 1 tart Apple (such as Granny Smith)
- ½ whole lemon (juiced)
- 150 grams Whipped cream
- 100 grams Natural yogurt
- 1 teaspoon freshly grated Horseradish
- 2 tablespoons White vinegar
- 3 tablespoons sunflower oil
- freshly ground peppers
- 2 tablespoons scallions
Drain the herring fillets well and cut into bite-size pieces. Thinly slice the pickles. Peel the shallot and slice thinly. Rinse the apple, cut into quarters, remove the core, slice thinly, crosswise and toss with 1 tablespoon lemon juice.
Whisk together the sour cream, yogurt, horseradish, sunflower oil and white wine vinegar. Season with salt, pepper and remaining lemon juice. Distribute all of the salad ingredients (except the chives) into serving glasses, drizzle with the dressing and serve sprinkled with chopped chives.
