Preparation steps

1.
Mix the butter with the mustard and lemon juice, season with salt and pepper and smear all over the rabbit legs. Set aside to marinate for 1 hour.

Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
3.
Heat the oil in a large ovenproof skillet and fry the rabbit legs on all sides until just browned. Transfer the skillet to the oven and roast for 20 - 25 minutes, basting once.

Remove the rabbit legs from the skillet and keep warm. Put the skillet on the hob, add the herbs and pour over the chicken broth. Bring to a boil, stir in the honey and season with salt and pepper. Simmer for 5 minutes.
5.
Serve the rabbit legs with the sauce and herbs poured over and boiled potatoes alongside.
