1 tablespoon Parmesan (freshly grated)
1 tablespoon Fresh herbs (finely chopped mixed z. B. rosemary, thyme, parsley)
1 egg

2 Veal cutlets (each 150 gram)
1 tablespoon clarified butter

Preparation steps

1.

Remove crust from white bread, cube and process in a food processor to crumbs. Mix with Parmesan and herbs on a flat plate.

2.

Crack the egg in a deep plate. Sift the flour in a shallow dish.

3.

Pound the cutlets slightly flatter if necessary, then season with salt and pepper. Dredge first in flour, then drag through the egg and finally in the breadcrumbs.

4.

Cook in a skillet in hot butter over medium heat on both sides until golden brown. Serve.
