1 teaspoon
7 ounces
Pastry flour (or very fine sifted whole-wheat flour)
2 tablespoons
Preparation

Kitchen utensils

1 Small pot, 1 Baking sheet, 1 Bowl, 1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Fine grater, 1 Hand mixer, 1 Parchment paper, 1 Plastic wrap

Preparation steps

1.
Heidesand preparation step 1

In a small pot, cook butter over low heat, stirring constantly, until light brown. Allow to cool in a bowl.

2.
Heidesand preparation step 2

Halve vanilla bean lengthwise and scrape out seeds with the back of a knife. Beat together butter, powdered sugar, 1 pinch of salt, vanilla seeds and lemon zest until creamy with a hand mixer. Add flour and milk and beat with the dough hook to combine.

3.
Heidesand preparation step 3

Shape dough into two logs, about 3 cm (approximately 1 inch) in diameter. Wrap in plastic wrap and refrigerate until firm, about 2 hours. Slice the logs into rounds, about 7 mm (approximately 1/4 inch) thick. Place on parchment-lined baking sheets and bake in preheated oven at 180°C (approximately 350°F) until lightly golden, 12 to 15 minutes. Let cool completely before serving.
