Hearty Herring Appetizers
Rinse the eggplant, cut into slices and season with salt. Let stand to draw out water, pat try and fry until golden brown in a skillet in hot oil. Drain on paper towels and cut lengthwise into 2 cm (approximately 3/4 inch) wide strips. Rinse the apple, cut into quarters, remove seeds, cut into narrow strips and sprinkle with lemon juice. Rinse the bell pepper, trim, halve and cut into thin strips.
Drain the baby corn. Cut ham lengthwise wide into 2 cm (approximately 3/4 inch) strips. Rinse the arugula, trim and spin dry. Blot herring dry with paper towels and halve lengthwise. Drizzle with a little apple cider vinegar and sunflower oil.
Top herring with ham and eggplant. Top with apple strips, bell pepper strips and baby corn. Roll herring and attach arugula leaves to rolls with toothpicks. Arrange on a platter and serve cold as a small appetizer.
