Hearty Cheese Soufflé
Separate the eggs.
Beat butter with yolks, paprika and nutmeg until fluffy. Then alternately stir in grated cheese, heavy cream and creme fraiche. Fold in stiffly beaten egg whites and flour. Season with a pinch of salt. Brush ramekins with butter and sprinkle with breadcrumbs. Pour in mixture and bake at 200°C (approximately 400°F) for about 10-15 minutes until golden brown. Serve immediately.
