Depending on preference, blueberries, blackberries, banana slices or other fruit can be used instead of raspberries. If you prefer to do without the heart-shaped pancakes, you can also just bake normal pancakes.

1 pinch salt
1 tablespoon sugar
clarified butter (for frying)
Maple syrup (for serving)

Preparation steps

1.

Separate eggs. Beat egg whites and chill. Combine egg yolks with flour and milk to form a smooth batter. Let rest 10 minutes.

Beat chilled egg whites with a pinch of salt and sugar to form a stiff and glossy meringue. Fold into batter.

Heat clarified butter in a frying pan, Place a heart-shaped cookie cutter in the pan and pour a portion of batter into cookie cutter. When batter begins to bubble, remove cookie cutter and flip. Cook until golden brown on both sides. Repeat until all batter has been cooked. 

4.

Plate pancakes, drizzle with maple syrup and garnish with raspberries. Serve immediately
