For the muffins
1 cup all-purpose flour
1 Tbsp Baking powder
1 pinch salt
¾ cup sugar
1 cup butter
4 ozs Dark chocolate (60% cocoa solids)
4 eggs (beaten)
1 tsp vanilla extract
For the icing
1 egg white
4 cups powdered sugar
1 tsp lemon juice

Preparation steps

For the muffins: heat the oven to 200°C (180° fan) 400°F gas 6. Grease 12 silicone muffin moulds.

Sift the flour, baking powder and salt into a mixing bowl. Stir in the sugar.

Melt the chocolate and butter in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat and stir into the flour mixture.

Add the eggs and vanilla to the mixture and stir until only just combined.
5.
Spoon into the moulds and bake for 20-25 minutes until well risen and firm. Cool in the moulds.
6.
For the icing: beat the egg white until frothy. Sift in half the icing sugar and beat well. Add the lemon juice and enough icing sugar to give a softly peaking consistency. Beat well until very smooth. It should be thick enough to pipe. If too thin, gradually beat in more sifted icing sugar.
7.
Spoon the icing into a piping bag with a small plain nozzle. Pipe the letters on the muffins and leave to set.
