For the batter
4 egg whites
4 Tbsps cold water
200 grams sugar
2 tsps Orange peel (zest)
4 egg yolks
60 grams Pastry flour
80 grams cornstarch
2 Tbsps cocoa powder
1 ½ tsps Baking powder
For sprinkling
4 centiliters Rum
For the filling

50 grams sugar
100 grams ground Hazelnuts

250 grams powdered sugar

Preparation steps


For the batter, beat egg and water unitl very stiff, stir in sugar and orange zest. Add yolks one at a time. Mix remaining batter ingredients together and fold into egg mixture. Grease a springform pan (26 cm, approximately 10 inches) on the bottom only and fill with better. Bake in preheated oven at 200°C (approximately 400°F) on second shelf from bottom for approximately 35–45 minutes. Let cake cool. Slice crosswise into 3 tiers and drizze each with rum.


For the frosting, whip cream until stiff. Mix together sugar, nuts and cinnamon. Reassemble cake, sprinkling nut mixture between layers. For decorating, mix powdered sugar, egg whites and rum until smooth and place into 2 small paper bags. Stir green food coloring into second bag.


Add red food coloring to the whipped cream frosting and spread over cake. Let it dry. Arrange sugar flowers in a bouquet and add to cake. Use green and white glaze to decorate. Allow everything to dry well, then slice and serve.
