2 Avocados
2 Limes (juice)
5 tomatoes (deseeded and finely diced)
2 sprigs Dill (tips finely chopped)
4 tablespoons sesame oil
3 tablespoons Cider vinegar
2 tablespoons Fish sauce
freshly ground Black pepper
Chili powder
4 tablespoons black Sesame seeds
Lime wedge (to serve)

Preparation steps

1.
Cut the courgettes into fine spaghetti strips using a spiral cutter or grater. Cut the avocado into dice and drizzle immediately with lime juice.
2.
Mix together the courgette spaghetti, avocados, tomatoes and dill. Mix the oil, vinegar and fish sauce through the vegetables and season to taste with ground black pepper and a pinch of chilli powder.
3.
Arrange the mixture on plates and sprinkle with sesame seeds. Garnish with lime wedges and serve.
