½ cube fresh Yeast (21 grams) (approximately 3/4 ounce)
1 Tbsp sugar
75 grams Sourdough
2 tsps salt
500 grams Rye flour
1 ½ kilograms lean ham

Preparation steps

Dissolve the yeast in 350 ml (approximately 1 1/2 cups) lukewarm water with the sugar. Combine the flour, starter and salt and mix until combined. Make a well in the center, add the yeast mixture and knead until smooth. Transfer to a lightly floured work surface and knead with your hands until the dough is no longer sticky. If necessary, add more water or flour. Return to the bowl, cover and let rise for about 1 hour in a warm place.

Rinse the ham and pat dry. Knead the dough on a floured surface then roll out until 1-2 cm (approximately 1/3-3/4 inch) thick. Place the ham in the center and wrap the dough over the ham, pressing down lightly to adhere. Place on a baking sheet lined with parchment paper and sprinkle with flour. Cover and let rise for 30 minutes.

Preheat the oven to 220°C (approximately 425°F).

Bake for 60-70 minutes.

Remove from the oven and serve sliced, warm or cooled.
