The sour cream on the Alsatian tarte flambée provides a nice creaminess and additionally offers the nutrient combination of calcium and phosphorus for healthy teeth and strong bones. Together with the turkey bacon, Alsace Tarte Flambée is a high-quality source of protein, which is particularly important for muscle maintenance.

For a vegetarian version of the Alsace tarte flambée, only the turkey bacon has to be replaced or omitted. Finely diced smoked tofu or Hokkaido pumpkin are suitable alternatives.

Preparation steps

Combine yeast and goose fat in 170 ml (approximately 3/4 cup) of lukewarm water. Add flour and salt and knead to a smooth dough. Shape dough into a ball and let rise 1 hour, covered in a warm place. Meanwhile, peel onions and cut into thin rings. Preheat oven to 220°C (approximately 425°F).

Knead dough again, roll out on a floured surface into a thin round circle and place on an oiled baking sheet. Spread sour cream over the dough, sprinkle evenly with ham and onions. Season with pepper. Bake in preheated oven for about 15 minutes. Remove from oven, sprinkle with chopped parsley and serve.
