50 grams butter
200 grams ham
1 bunch scallions
4 eggs
250 milliliters milk
150 grams Cheese

2 bunches mixed Fresh herbs (such as cress, parsley, chervil)

Preparation steps

1.

Mix the flour with the cold butter (cut into small pieces) and a pinch of salt. Quickly knead into a dough, form into a ball and refrigerate for 1 hour.

Rinse and trim the scallions and cut into 2 cm (approximately 1 inch) pieces. Cut the ham into strips about 1 cm (approximately 1/2 inch) wide.

Pluck the herb leaves from the stems. Set some aside for garnish and coarsely chop the rest.

Mix the eggs, milk and cheese well and season with salt, pepper and nutmeg.

Roll out the dough and line a greased springform pan with it. Spread the ham, herbs and scallions on the dough and pour in the egg mixture. Bake at 180°C (approximately 350°F) on the lower rack of the oven for about 50 minutes. Serve warm or cool, garnished with herbs.
