8 eggs
2.333 cups butter
1 ½ cups sugar
1 teaspoon vanilla extract
4 cups flour
¼ cup Rum
2 teaspoons Baking powder
½ cup milk (more if necessary)
In addition
1 jar Apricot Jam
25 ounces ready to roll Fondant (bought product)
Chocolate (for the eyes)

Preparation steps

Beat the eggs with the sugar until pale and creamy. Melt the butter in a small pan over a low heat, then add to the beaten eggs and sugar, still beating. Mix the flour with the baking powder and stir into the mixture, a spoonful at a time, alternating with rum and milk. Use a little more milk if necessary.

Spread the mixture smoothly in a deep baking tray lined with baking parchment and bake in a preheated oven (200°C) for 40-50 minutes.

Test to see if it is done by inserting a needle, then take out of the oven and leave to cool.

Cut the cake into approximately 3 cm squares.

Roll out the icing (at room temperature) to a thickness of 3 mm on a silicone pastry mat or between two sheets of foil or clingfilm. Cut into circles approximately 9-10 cm in diameter. Brush the top and sides of the sponge squares with apricot jam. Place a circle of icing over each sponge square and frill out the edges. Add chocolate drops for eyes. Serve with coffee.
