Gyros with Tzatziki and Tomato Salad
- For the Tzatziki
- ½ Cucumber
- 200 grams Quark
- 250 grams Natural yogurt
- 1 tablespoon lemon juice
- 6 tablespoons olive oil
- 4 garlic
- freshly ground peppers
Peel the cucumber, halve lengthwise, remove the seeds, and grate. Mix the quark, yogurt, lemon juice, 1 tablespoon of olive oil, and the grated cucumber. Peel the garlic, and pass through a press into the yogurt mixture. Season to taste with salt and pepper. Rinse the meat and pat dry. Trim and cut into thin strips. Mix the pork with the thyme and oregano, and season to taste with salt and pepper.
Peel the onion, cut into rings, and add 2/3 to the meat. Mix in 3 tablespoons of oil, and let marinate for 10 minutes. Sear the meat in a hot pan. Rinse the tomatoes, and cut into pieces.
Slice the peppers. Drain the anchovies, and mix with the tomatoes, remaining onions, olives, capers, diced feta, and remaining olive oil Transfer the meat to plates, top with the pepper mixture and a dollop of tzatziki, and serve.
