800 grams lean Pork
1 Tbsp Spice mix (for Gyros)
6 Tbsps olive oil

1 pinch sweet ground paprika
200 grams onions
200 milliliters Beef broth
1 Tbsp finely chopped parsley
For the Tzatziki
3 garlic cloves
1 pc Cucumber (about 200 grams or about 7 oz)

150 grams Natural yogurt (from sheep's milk if available)
125 grams Quark
1 Tbsp olive oil
1 Tbsp White vinegar
freshly ground peppers
thyme
1 Tbsp finely chopped Dill
2 Tbsps black Olives

Preparation

For the pork, cut the meat into strips. Mix with the spices and the oil. Peel the onion, cut into thin rings, blanch in boiling water, rinse with cold water, drain well and mix with the meat. Cover and refrigerate 3-4 hours to marinate.

For the tzatziki, peel the garlic cloves and chop very finely. Peel the cucumber, cut in half lengthwise and remove the seeds with a small spoon. Grate the cucumber roughly, sprinkle with salt and let it sit for 10 minutes, then squeeze out the water. Stir the yogurt with quark in a bowl until smooth. Add the garlic, cucumber, oil and vinegar, season with salt and pepper and sprinkle in the dill.

Heat a large pan and stir fry the pork on medium heat for about 10 minutes. Season with salt, pepper and paprika. Remove from the pan, deglaze the drippings with the broth, bring to a boil, reduce slightly, and thicken to taste. Add the meat back into the pan, heat through and season again if needed.

Serve the meat drizzled with tzatziki sauce. Garnish with olives, tomatoes, thyme and dill and serve with pita bread.

The curd cheese contained in it is not only good for athletes, because it is low in fat and at the same time rich in protein with 13 grams of protein per 100 grams of curd cheese. The milk protein casein is absorbed relatively slowly by the body and keeps us full for a long time. Whey protein, on the other hand, is immediately available and therefore ideal for after exercise.

Just mix your gyros spice yourself: Mix oregano, thyme and rosamrin in equal parts with paprika powder, salt and pepper. Depending on your preference, you can add marjoram, garlic powder, chilli, cumin and coriander. Arachidonic acids from pork are suspected of causing inflammatory diseases, so this fatty acid should be avoided if possible. In this dish you can therefore replace the meat with chicken meat.
