- For the marinade
- 1 green chili pepper
- 1 garlic clove
- 2 sprigs Sage
- 1 sprig rosemary
- 1 Tbsp lemon juice
- 3 Tbsps vegetable oil
- 1 pinch ground cilantro
- 1 pinch ground Cumin
- salt
- Black pepper
- 4 Veal chops (each about 200-250 grams)
- Sage (for garnish)
- rosemary (for garnish)
- 4 size Baked potatoes (with sour cream)
Preparation steps

Chop the chiles coarsely, peel the garlic and finely chop. Rinse, dry and coarsely chop the herbs. Puree everything with lemon juice, oil and spices in a blender (or finely crushed in a mortar). Season with salt and pepper. Mix the chops with the marinade in a freezer bag and marinate in the refrigerator for 1-2 hours.

Either on the hot grill or with a little oil in a pan, cook the drained chops on both sides for 1-4 minutes. Roast (the cooking time varies to the desired doneness).

Arrange on plates with sage and rosemary and one baked potato and sprinkle with pepper. Serve hot.
