Grilled Stick Bread
Mound flour in a bowl and make a well in the center. Crumble yeast into well in flour. Mix water and sugar into yeast, cover bowl and let stand for about 30 minutes.
Add salt to flour mixture and knead to a dough that pulls away from the bowl. Cover dough and let rise for about 60 minutes in a warm place.
Divide dough into 12 portions and shape each into a strand about 30 cm long (approximately 12 cm long). Spiral dough strands onto long sticks and cook over glowing charcoal, turning frequently.
