1 Rinse sea bass inside and out. Pat dry and season with salt and pepper.
2 Squeeze the lemon and put the juice in a small bowl.
3 Peel the garlic and press it through a garlic press into the lemon juice. Stir in the oil.
4 Brush sea bass inside and out with lemon-garlic oil.
5 Slit the skin on both sides with a sharp knife 4 times.
6 Rinse bay leaves, shake dry and tuck 1 leaf into each slit.
7 Put fish in a grill basket and cook on a hot grill for about 15 minutes on each side. Serve hot.
