4 thick Pork belly (with rind)
2 slices Toast (day-old)
100 grams Smoked bacon
1 bunch parsley
1 onion
salt (pepper)
½ teaspoon Mustard seed
½ teaspoon Red peppercorns

Preparation steps

Dice bacon finely and cook in a dry pan, remove from the pan and drain on paper towels. Cut toast into cubes and cook until crispy in bacon drippings, remove from the pan. Peel onions and chop finely, saute for a few minutes. Rinse parsley and chop finely, add to the pan together with bread cubes and bacon. Season with salt, pepper, mustard seeds and red pepper. Rinse and pat dry pork belly slices and spread with the mixture, roll up tightly.

Thread rolls on skewers and grill on hot grill for about 15 minutes or until crispy, turning often. Transfer to plates and serve.
