Grilled Oranges with Sweet Cream
Soften gelatin in cold water. Mix quark with 250 ml (about 1 cup) buttermilk, lemon peel and 4 tablespoons of honey until smooth. In a small saucepan, heat gelatin and remaining buttermilk over low heat, until gelatin is dissolved, but do not allow to boil.
Mix heavy cream until stiff. Mix gelatin mixture into quark mixture and fold in whipped cream. Pour into a pan and refrigerate for at least 2 hours.
Peel oranges and remove segments, taking care to remove skin, pith and membrane. Divide orange segments into two bowls and drizzle remaining honey and Grand Marnier. Grill on preheated grill for about 2-4 minutes. Using two tablespoons, form quenelles from quark mixture. Arrange in bowl with oranges and serve sprinkled with crushed caramel candy.
