Grilled Mackerel with Herbs

- 4 sprigs Lemon thyme
- 4 sprigs parsley
- 4 sprigs Lemon balm
- 2 garlic cloves
- 4 small Mackerel (ready to cook; about 12 oz)
- salt

- 2 Tbsps olive oil
Rinse all herbs and shake dry. Peel garlic cloves and cut in half.
Rinse the mackerel and pat dry. Season inside and out with salt and pepper.
Make 4-5 slits on both sides of each fish to prevent bursting while grilling.
Place 1 sprig each of lemon thyme, parsley and lemon balm into the abdominal cavities of each fish along with ½ clove of garlic. Brush mackerel all over with oil.
Place mackerel in a fish grill basket and seal the clamp. Cook on the hot grill until charred in spots on both sides, 12-15 minutes, turning once, and serve.

Even smarter
If you don't have a fish grill, you can prepare the mackerels by spreading olive oil on 4 large pieces of aluminium foil , wraping the fish loosely in it and grilling them on the hot grill.
