Grilled Fillet of Beef

- 600 grams Beef fillet (ccenter-cut, ready to cook)
- 4 Tbsps olive oil
- 1 sprig rosemary
- 3 garlic cloves
- coarse Sea salt
- freshly ground peppers
Rinse beef, pat dry and tie with kitchen string if desired. Brush with oil on all sides. Rinse rosemary and press garlic cloves through a garlic press.
Rub beef with garlic and rosemary. Place beef on a grill heated to 120°C (approximately 250°F) over indirect heat. Close grill and cook about 25 minutes, turning meat regularly so that all sides cook evenly. Wrap in aluminum foil and let rest 5 minutes. Remove foil, season with salt and pepper and serve.

The beef has a lot to offer: Iron for blood formation, protein for strong muscles and important B vitamins for energy metabolism. In addition, compared to typical grilled foods such as sausages, it has significantly less fat and in return, the fat it contains consists partly of omega-3 fatty acids. The proportion of these anti-inflammatory fatty acids is higher in free-range farming and organic meat because the animals are fed on grass.
