14 ounces milk
7 ounces Whipped cream
3 drops green Food coloring
2 Green tea
4 egg yolks
4 ounces sugar

Preparation steps

Split the vanilla bean in half lengthwise, scrape the seeds into a saucepan, add the bean, milk, cream and food coloring and bring to a boil. Add the tea bags, remove from heat and let infuse for about 10 minutes. Remove the tea bag and vanilla bean. Whisk the egg yolks with the sugar until white and creamy.

Slowly whisk the vanilla milk into the egg yolk mixture in a thin stream, strain through a sieve back into the saucepot and simmer, stirring with a wooden spatula, until thickened.

Let cool over an ice bath, stirring occasionally. Transfer to a shallow container and freeze for a minimum of 5 hours, stirring every half hour to break up any large ice crystals.
