Green Beans in Wine Batter
Sift the flour with a pinch of salt and stir in the wine to form a thick batter. Mix the egg yolks and the oil and add to the flour. Beat the egg whites until stiff and fold in.
Rinse and trim the beans and blanch in plenty of salted water for 8-10 minutes. Drain and allow to cool.
Heat some oil in a high pan. Coat the beans in the batter and fry until golden brown. Drain on paper towels.
