Preparation steps

Peel asparagus' lower third, cut off the ends and cook asparagus in boiling salted water for approximately 10-12 minutes. Remove and drain.

For the Hollandaise: Meanwhile, melt the butter and skim off the foam. Add egg yolks and wine to a metal bowl and, over a hot waterbath, beat until foamy. To this, add the butter, first in drops, then in a constant stream, while constantly stirring until it becomes a nice sauce. Don't allow the egg to solidify. Season with lime juice, salt and pepper.

Dress asparagus with the hollandaise and serve immediately.
