oz Yeast (or 3.5 g dried yeast)
cup lukewarm milk
1 ⅔ cups all-purpose flour
1 Tbsp honey
1 egg
¼ cup melted butter
vegetable oil (for deep-frying)
sugar (for tossing)
For the syrup
0.333 cup honey
¼ cup sugar
To serve
½ cup chopped almonds
ground cinnamon
Vanilla ice cream (if desired)

Preparation steps

Dissolve the yeast in the milk. Sieve the flour into a bowl, make a well in the centre and pour in the yeast solution. Stir in the honey and a little flour, cover and leave for around 30 minutes to start working.

Add the egg, a pinch of salt and 20 g butter and work to form a smooth dough that comes away from the edge of the bowl. Cover and leave to rise for a further 30 minutes.

Knead again briefly. Dip a tablespoon in the remaining, liquid butter and use it to scoop out small balls of dough. Carefully transfer to the hot oil (approx. 170°C, 350°F) and fry in batches for 2-3 minutes until golden brown. Turn during cooking if necessary. Remove from the oil and drain on kitchen paper.

For the syrup, bring the honey and sugar to the boil with 3-4 tbsp water and simmer for 3-4 minutes. Remove from the heat and leave to cool.

Arrange the dough balls on plates. Pour over the honey sauce and sprinkle with almonds and cinnamon. Serve with vanilla ice cream if desired.
