1 cup sugar
½ teaspoon vanilla extract
2 cups water
1 ⅛ cups dried Apricot
2 cups double cream (chilled)
2 ¼ cups full-fat Greek yogurt (chilled)
4 fresh Apricot (skinned and chopped)
4 tablespoons chopped Walnut
2 tablespoons runny honey

Preparation steps

1.
Put half the sugar in a pan with the vanilla and the water. Bring to a boil over high heat. When the sugar has dissolved, add the dried apricots.

Remove from the heat and cool to room temperature, then cover and refrigerate for at least 20 to 25 minutes or until well chilled. Discard the syrup, and cut the apricots into small dice.

Whisk the double cream and the remaining sugar until stiff.

Place half the yoghurt in a bowl, then fold in half of the whipped cream, until completely combined. Fold in the remaining whipped cream to form a yoghurt mousse.
5.
Divide the diced apricots evenly among individual small bowls or glasses. Spoon equal portions of the yoghurt mousse on top of the fruit, smoothing it evenly.
6.
Spoon over the remaining yoghurt, allowing it to run down the insides of the dishes.
7.
Top with the chopped fresh apricots and walnuts and drizzle with honey.
