Preparation steps

For the vanilla cream, mix pudding mix with 6 tablespoons milk. Bring remaining milk with the sugar to a boil. Stir in the pudding mixture and return to a boil while stirring. Remove from the heat. Whisk egg yolks with cream and stir into the pudding mixture. Allow to cool and refrigerate until well chilled.

Rinse, halve and pit apricots. Place apricot halves in a buttered baking dish. Finely chop the marzipan. Mix with Amaretto. Beat egg whites until stiff. Mix the marzipan with a little beaten egg whites. Fold in the remaining egg whites.

Spoon a little of the marzipan mixture into each apricot half and sprinkle with almonds. Place under a preheated broiler briefly, watching carefully. Serve the hot apricot on the chilled vanilla cream. Dust with powdered sugar and garnish with mint leaves.
