Grapefruit Layered Dessert
Beat the cream until stiff. Stir the quark with the sugar until smooth and fold in the cream. Peel the grapefruit with a sharp knife carefully removing the white pith. Seperate the from the membranes into sections and reserve any juice that emerges. Squeeze the juice from the grapefruit membranes. Mix the juice with the sparkling wine, stir in the sugar and the grapefruit segments.
Spread half of the cream mixture into 4 glasses, slightly drain half of the grapefruit segments and place on top. Top with the remaining cream on top and the remaining grapefruit segments, sprinkle with a little of the juice-sparkling wine mixture and serve garnished with mint.
