For the dough
500 grams Pastry flour
1 teaspoon Baking powder
150 grams sugar
2 eggs
250 grams cold butter
For the topping
1 ½ kilograms green, pitted Grape
Pastry flour (for kneading)
Fat (for greasing)
50 grams ground almonds
1 teaspoon cinnamon
4 eggs
60 grams sugar
200 grams Crème fraiche
4 tablespoons Whipped cream
2 tablespoons Grape juice
100 grams Almond slivers
For the garnish
powdered sugar (to sprinkle)

Preparation steps

For the dough: Combine flour and baking powder on the work surface. Create a well in the center and add eggs to well. Distribute cold butter in small pieces around the edge of the flour and quickly knead in sugar to form a dough. Shape into a ball, wrap in foil and chill for 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

For the topping: Rinse grapes, remove from stems and cut in half.

Roll out 3/4 of the dough on a well-floured surface. Make dough slightly larger than the baking sheet. Grease baking sheet with fat and lay dough on sheet. Trim edges and prick dough with a fork several times. Bake for about 10 minutes. Remove and let cool.

Combine trimmed dough and remaining dough and knead. Thinly roll out to about 5 mm (approximately 1/5 inch) thick and cut out 1 cm (approximately 1/3 inch) wide strips. Twist into spirals and use to decorate the edges of the pastry.

Combine almonds and cinnamon. Sprinkle onto dough and top with grapes.

Combine eggs, sugar, creme fraiche, cream and grape juice. Pour over grapes, sprinkle with almonds and bake for 40-45 minutes. Remove, let cool and serve dusted with powdered sugar.
