Even smarter

These cookies are lower in sugar than regular cookies because of the use of bananas and granola. In addition, they provide your body with more fiber and nutrients. 

You can use different flavors of granola to change up the flavors of the cookies.

9 ounces softened butter
6 ounces brown sugar
3 ½ ounces sugar
2 eggs
7 ounces Pastry flour
1 teaspoon Baking powder
1 pinch salt
1 Banana
14 ounces Granola (with coconut, nuts and raisins)

Preparation steps

1.

Preheat the oven to 350°F. Line a baking sheet with parchment paper.

Beat the butter with the sugar and brown sugar until light and creamy. Add the eggs, one at a time, mixing well after each addition.

Stir in the flour, baking powder and salt and mix until smooth. Peel the banana and finely mash with a fork. Fold the mashed banana and granola into the dough.

Scoop by the tablespoonful onto the prepared baking sheet and bake for 12-15 minutes, until golden brown.

Remove the cookies from the oven and cool on a wire rack.
