1 cup good quality white chocolate (broken into pieces)
1.333 cups double cream
2 egg whites
1 Tbsp superfine caster sugar
2 Tbsps Cocoa

Preparation steps

Break the chocolate into small pieces and place in a bowl with the cream. Place over a pan of simmering water and whisk until the chocolate has melted. Remove from the heat, leave to cool and then chill for at least 30 minutes.

Whisk the egg whites, adding the sugar as you whisk, until thick and glossy. Whisk the chocolate mixture until the mixture forms soft peaks, then fold the egg whites in a third at a time, being careful not to lose the air.

Spoon into individual ramekins and chill until needed. Dust lightly with cocoa powder before serving.
