1 kilogram green Gooseberry
1 kilogram jam sugar (1:1 ratio)
3 tablespoons lemon juice
2 centiliters Cognac

Preparation steps

Rinse and trim the gooseberries, then add to a large pot with the jam sugar, lemon juice, and brandy. Press with a masher, and let infuse for 20 minutes. Bring the mixture to a boil.

Skim any foam that rises to the top. Cook for 4 minutes, then remove from the heat. Place a small amount on a plate and place in the refrigerator. If the mixture doesn't gel, then boil again briefly.

Fill the prepared hot jars to the brim with the jam. Seal tightly and place upside down to cool slightly. Turn right side up, and cool completely. Store in a cool and dark place.
