200 grams Pastry flour
100 grams ground Hazelnuts
125 grams sugar
1 packet Vanilla sugar
1 egg yolk
150 grams softened butter
600 grams green Gooseberry
2 sugar

Preparation steps

1.

Mix the flour, hazelnuts, sugar and vanilla sugar. Knead in the egg yolks and butter until crumbly.

Spread 2/3 of the crumble in a pie dish and press gently. Chill.

Rinse the gooseberries and drain on paper towels.

4.

Spread the gooseberries on the crumble crust. Sprinkle the remaining crumble and 1 tablespoon of the sanding sugar on top. Bake for about 30 mintues at 200°C (approximately 400°F). Serve sprinkled with the remaining sanding sugar.
