The versatile gooseberries cut a good figure in this crumble and also convince with their inner values: Immune-strengthening vitamin C and gently draining potassium are the stars in the small fruits; the soluble fibre pectin contained in the berries also plays an important role, as it is particularly good for digestion.

If you want to enjoy the crumble vegan, the butter can be replaced with coconut oil. Important: The coconut oil should not be liquid, but solid, so that it can be mixed with the other ingredients to form crumbles.

Preparation steps

For the berries: Rinse and clean gooseberries. Combine water with sugar, lemon peel and cinnamon stick and bring to a boil. Add gooseberries and bring to a boil, remove from heat.

For the crumble: Cut marzipan into small pieces. Combine with flour, sugar and butter and process until crumbly. Spread gooseberries with some of the broth in buttered ramekins, sprinkle with crumbles. Bake in preheated oven at 200-225°C (approximatley 400-425°F) (gas mark 3-4, fan: 180-200°C) for about 20 minutes. Garnish with mint and serve dusted with powdered sugar.
