½ packet vanilla pudding mix

Preparation steps

Crush the cornflakes finely in blender or with a rolling pin. Mix with 80 grams (approximately 1/2 cup) of sugar, softened butter and 1-2 tablespoons of water.

Spread 1/2 of the mixture onto the bottom of a greased springform pan, press up slightly around the outside to form an edge and refrigerate for about 30 minutes.

Rinse and drain the gooseberries. Stir the cottage cheese and sour cream together with remaining sugar, custard powder, egg yolks, lemon zest, juice and cinnamon. Beat the egg whites until stiff, fold and fold into the mixture along with the gooseberries.

Spread the mixture on the base, sprinkle with the remaining cornflake mixture and bake in a preheated oven at 180°C (approximately 350°F) for about 50 minutes. Remove and let cool on a wire rack. Slice and serve on dessert plates.
