Preparation steps

For the red cabbage, remove the outer leaves, cut the head in half, cut out the stalk and cut into fine strips. Cut the apple into quarters, remove the cores, peel, and cut into small pieces. Heat the lard in a saucepan. Sauté the apple pieces, then sprinkle with sugar. Caramelize, then add the bay leaf and clove. Pour in the vinegar, red wine, and water, cover and simmer over low heat for 40 minutes, stirring occasionally.

For the noodles, rinse the potatoes, cover with salted water, bring to a boil and cook for 30 minutes. Peel and press through a ricer while still hot, then let cool. Add the eggs and flour and process everything into a smooth dough. Season with salt and pepper. With floured hands, form into finger thick and thumb-long rolls with pointed ends. Carefully drop the noodles into abundant salted boiling water, reduce the heat and simmer for about 2 minutes. Remove with a slotted spoon, plunge in cold water, then drain well in a colander.

Prick the goose legs several times, rub with salt and pepper and sear on all sides for 20 minutes in clarified butter. Peel the onions and garlic. Skim the goose fat from the pan, add the onion, garlic and sage to the legs and sauté. Pour in the wine, cover and simmer for 1 hour.

Halve the yellow apple, remove the core, peel and cut out a small star shape. For the noodles, heat the clarified butter in a pan and fry in portions. Add the apple star and cook briefly. Serve the goose legs with red cabbage, noodles, onion and apple stars on plates.
