Preparation steps

Preheat the oven to 200°C (180° fan) | 400F | gas 6.

Grease the holes of a muffin tin and dust with flour. Melt the chocolate over a hot bain-marie, then remove from the heat and stir in the cold butter a piece at a time. Stir until smooth and creamy. S

Separate the eggs and beat the egg whites until stiff. Beat the egg yolks with the sugar until pale and creamy, then carefully stir into the cooled chocolate and butter mixture. Fold in the beaten egg whites.

Sieve the flour over and fold in carefully. Divide half of the mixture between the holes of the muffin tin, add a soft caramel to each and cover with the rest of the mixture. Bake in the preheated oven (middle shelf) for about 30 minutes. Do not open the oven door while they are baking!

Leave to cool slightly in the tin, then take out and serve.
