Preparation steps

Preheat the oven to 180°C | 350F | gas 4.
2.
In a pan melt the butter. In a bowl beat together the egg whites and sugar until glossy.

Add the melted butter, flour and honey and combine until you have a smooth mixture.
4.
Line a large baking tray with baking parchment and lightly butter it.
5.
Make small piles of the paste on the paper and spread them into circles with the back of a wet spoon.
6.
Bake for 10 minutes until they start to turn golden-brown at the edges.
7.
Remove the biscuits from the oven and using a metal spatula remove them from the baking sheet. Immediately while the biscuits are still soft, on another piece of baking parchment, roll the discs into a cigarette shape tube then let them cool completely on a grid.
8.
Use as an accompaniment to fruit compote or chocolate mousse.
