4 cups powdered sugar
2 cups all-purpose flour

6 egg whites
1 tablespoon double cream
1 teaspoon vanilla extract

Preparation steps

Combine the sugar, flour and salt and make a well in the centre. Stir in the melted butter, lightly beaten egg whites, cream and vanilla and mix until thoroughly combined. Cover and chill for at least 2 hours.

Preheat the oven to 220°C | 425F | gas 7. Lightly grease two baking sheets.

Spoon a tablespoon of batter onto the baking sheets, using the back of the spoon to spread the circle very thinly. Repeat to make 3 more. Bake for 5-6 minutes, until just brown around the edges.

Meanwhile prepare a second baking sheet of batter.

Once the biscuits have baked, working very quickly, use a palette knife to transfer each one to the work surface, then roll them around a wooden spoon handle or similar to make a cigarette shape, then place on a wire rack to cool.

If the batter gets too stiff and cold to shape, simply return to the oven for 1 minute to soften up again. Continue until all the biscuits have been rolled.
