½ cup unsalted butter
1 cup water
1 tablespoon caster sugar
¼ teaspoon salt
¾ cup plain flour
4 medium eggs
2 medium egg yolks (beaten)
¼ cup Sugar crystal (or sugar nibs)

Preparation steps

1.
Preheat the oven to 200°C | 400F | gas 6.
2.
Cut the butter into cubes and add to a saucepan. Add the water, caster sugar and the salt to the pan and bring to the boil.
3.
Remove from the heat and then stir in the flour. Return to the heat and stir constantly so that the mixture does not stick to the bottom of the pan.
4.
Scrape the mixture into a bowl and then beat in the eggs, one at a time. Mix well until glossy and then transfer to a piping bag fitted with a straight-sided nozzle.
5.
Pipe the mixture into small balls on a lined baking tray. Brush each chouquette bun with beaten egg yolk and sprinkle with sugar crystals.
6.
Transfer to the oven and bake for 5 minutes before lowering the heat to 160°C | 325F | gas 3.
7.
Finish cooking for 25 minutes. Remove to a wire rack to cool before serving.
