Ingredients

Preparation steps

1.
For the apples: heat the oven to 180C (160C fan) 350F, gas 4. Grease a baking dish and a 25cm|10" square tin.
2.
Cut a lid from the apples and remove the core with an apple corer.
3.
Mix together the nuts, cinnamon, honey, rum and butter. Fill the apples with the mixture and place in the baking dish. Bake for about 20 minutes until the apples are tender. Set aside to cool.
4.
For the cake: beat together the butter and sugar until light. Whisk in the the eggs until light and fluffy.
5.
Mix together the flour, nuts, baking powder, spices and salt. Stir the flour mixture into the butter mixture until just combined.
6.
Spoon into the tin and spread until smooth. Arrange the baked apples on top and press into the mixture. Replace the tops.
7.
Bake for about 40 minutes until the cake is golden and cooked through.
8.
Sift icing sugar over the top and serve warm or cold.
