- For the Dough
- 1 cup flour
- ½ cup butter
- 1 egg
- 2 Tbsps honey
- ½ tsp chopped, fresh rosemary
- 1 pinch salt
- For the Filling
- 1 cup soft Goat cheese
- 1 egg
- ⅞ cup cream
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 4 fresh Figs (washed and halved)
Preparation steps

Combine the ingredients for the dough and knead into a ball. Refrigerate for at least 40 minutes.

Preheat oven to 350 degrees F/180 degrees C. Lightly grease and flour a tart pan.

To make the filling, combine the goat cheese, egg, and cream in a mixing bowl mix until well incorporated. Season with salt and pepper.

On a clean working surface sprinkled with flour, roll out the dough to for a smooth even circle. Press into prepared tart pan. Sprinkle flour on a clean working surface. Roll out dough into an even circle and press into the tart pan.

Pour the filling into the crust and top with fresh figs. Bake for 30 minutes or until crust is golden brown. Let cool slightly before slicing.
